Hot Brie Pasta

Our friend🥂Kelly writes, "My Mom compiled all of her personal favorite recipes into a cookbook that she gave to each one of us kids. I love making her Hot Brie Pasta. It’s simple, comforting, delicious, and my three constantly hungry boys adore it!"

  • 1 large bowl
  • 1 colander
  • 1 cheese grater
  • 1 garlic mincer
  • 1 all-purpose chefs knife


  • 1 pound ripe French Brie
  • ½ cup olive oil
  • 1 cup fresh basil leaves cut into strips
  • 4 large fresh garlic cloves minced
  • 4 large tomatoes cubed
  • ½ tsp salt
  • ¾ tsp pepper
  • 1 lb angel hair pasta
  • 6 oz Parmesan cheese freshly grated


  • Remove rind from cheese and cut into irregular pieces. Combine with next 6 ingredients in large bowl and let stand for 2 hours at room temperature. Don't stir after you have combined the ingredients.
  • Cook pasta al dente (don't overcook) and drain in colander.
  • Toss hot pasta with Brie mixture and some of Parmesan cheese.
  • Top with additional freshly grated Parmesan cheese and serve at once.
  • Mangia and enjoy!


Pair this delicious, creamy, hot Brie Pasta with a dry champagne/ sparkling wine or a fresh red Gamay. Gamay is a light-bodied red wine with low tannins and beautiful acidity. Made from Gamay grapes, this wine has bright red fruit notes that will pair well with the earthiness of the brie. Cheers!
